The Challenges Faced by Houston Restaurants, Including Josephine’s in Midtown, During the Start of Crawfish Season

Houston, Texas – The start of crawfish season is usually an exciting time for Houstonians, but this year, local restaurants are facing a unique set of challenges. The Gulf Coast is currently grappling with a crawfish shortage due to extreme heat and drought conditions that have severely impacted the habitats of these delicious crustaceans in Louisiana. According to a study conducted by the Louisiana State University Agricultural Center, over 250,000 acres of crawfish habitat were affected last summer, resulting in an estimated economic loss of $139 million.

One restaurant that has been particularly affected by this shortage is Josephine’s in Midtown. As a relatively new establishment, opening just last summer, this is their first experience navigating the challenges of crawfish season. Executive Chef Lucas McKinney explains that they had to delay serving crawfish by a month, as they wanted to ensure they could provide the best experience for their guests.

“We didn’t want our guests to have bad experiences with it for our first rollout of what we do for crawfish,” McKinney said.

Not only has the shortage impacted the availability of crawfish, but it has also driven up prices. McKinney reveals that prices are now double compared to last year. However, he remains hopeful that prices will begin to decrease as the season progresses, based on conversations he has had with Louisiana farmers.

“There are times when I’m standing in the kitchen, and I’m like, ‘That’s really an awesome-sized crawfish for where we’re at right now,'” McKinney shared.

Looking ahead, it is clear that the weather conditions will continue to play a crucial role in determining the fate of future crawfish seasons. Extreme heat and drought conditions can further stress the already delicate crawfish community. McKinney emphasizes the need to protect and conserve the crawfish population in order to ensure a sustainable future for this beloved seafood delicacy.

“I think that if we let some of the natural things take its course and not overharvest too much this year – if we are protecting it for the next two to three years, I think that we’ll be able to continue,” McKinney expressed optimistically.

As Houstonians anxiously await the return of ample crawfish supply, it is clear that the challenges faced by restaurants like Josephine’s in Midtown are a direct result of environmental factors. The crawfish shortage serves as a reminder of the delicate balance between human consumption and nature’s resources. Hopefully, with proper conservation efforts and favorable weather conditions, future crawfish seasons will bring an abundance of these delectable crustaceans back to our dining tables.
